Green Bean Salad

  1. 1 lb green beans
  2. 1 Tbsp. minced garlic
  3. 2 Tbsp. olive oil
  4. 1 Tbsp. lemon juice
  5. 1/4 cup chopped parsley
  6. 1/4 cup diced walnuts or sliced almonds
  7. 1 large tomato or 1/2 pint of cherry tomatoes
  8. 1 small onion
  9. Soft goat cheese to taste
  1. Steam green beans until tender.
  2. Sprinkle with salt and chopped garlic and mix with your hands.
  3. Drizzle with olive oil and mix with hands again.
  4. Add lemon juice, parsley, walnuts, chopped onion and chopped tomato.
  5. Stir in crumbled soft goat cheese
