Spinach Ricotta Pie

  1. Pie Crust- homemade or store bought
  2. 1 Tbsp. butter
  3. 1 cup minced onion
  4. 1 lb. spinach, finely chopped
  5. 1/2 tsp salt
  6. pepper to taste
  7. 1 tsp basil
  8. 1 lb. ricotta cheese
  9. 2 or 3 beaten eggs
  10. 3 Tbsp. flour
  11. 1/2 cup packed grated sharp cheese
  12. a dash of nutmeg
  13. Optional topping: sour cream and paprika
  1. Preheat oven to 375. Melt butter, add onion, saute for 5 minutes over medium heat.
  2. Add spinach, salt, pepper, basil, and cook until spinach is wilted.
  3. Combine all filling ingredients in a large bowl and mix well.
  4. Spread into unbaked pie shell.
  5. Top with sour cream, spreading to the edges of the crust.
  6. Dust generously with paprika.
  7. Bake 40 to 45 minutes or until firm to the touch at the center.
